The invention relates to a machine for the inspection and detection of defects in fruit products and to an associated method, said machine comprising: fruit conveying elements formed by pairs of rollers (1) positioned on parallel shafts and having a free and independent rotation; a conveyor chain (2) formed by the shafts of the rollers, in which the rollers adopt fixed positions at regular intervals; a lighting device; and an image capture device.
