摘要 The purpose of the present invention is to provide a method of manufacturing dakgalbi which maintains freshness in a distribution process while being helpful for health by natural antibacterial effects in accordance with wellbeing trend and exhibits excellent flavor and texture. The present invention provides a method of aging chicken-meat using carbonated water and pine needle powders comprising: a chicken-meat roller massage step (S3); and a carbonated water and pine needles cooling aging step (S5), and the method of manufacturing wellbeing dakgalbi using chicken-meat aged thereby. The chicken-meat roller massage step (S3) presses chicken-meat by using a roller with multiple protuberances after arranging the chicken-meat on a flat shelf in a state in which the chicken-meat, carbonated water and pine needle powders are mixed. The carbonated water and pine needles cooling aging step (S5) keeps the chicken-meat pasting through the chicken-meat roller massage step (S3) within a refrigerator in a state in which the chicken-meat is arranged on the shelf. The refrigerator includes a carbonated water tank arranged at the upper part of the inside and a pine needle storage part arranged at the lower part of the carbonated water tank. The pine needle storage part includes the shelf in which the chicken-meat is arranged is located at the lower part.
