摘要 PURPOSE: A method for manufacturing apple wine and the apple wine are provided to produce high quality wine with the flavor and the taste of apple through fermentation and maturation without adding sugar. CONSTITUTION: A method for preparing concentrated apple juice with a sugar content of 36 brix comprises the step of performing primary and secondary freeze concentration of apple juice at -20°C. Apple wine is fermented by adding 1x10^7cfu/ml of yeast (Saccharomyces cerevisiae) without adding sugar. A method for manufacturing apple ice wine comprises the steps of fermenting the apple wine at 20-28°C for 12-14 days and maturing the apple wine at 10°C or less.
