PURPOSE: A water-soluble polyester fiber is provided to express the water solubility without a separate formulation ingredient including CHDM or amine in order to express the water solubility, and to have the advantage that elution and weight deduction are facilitated, and the elution rate and the weight deduction rate are high. CONSTITUTION: A manufacturing method of a water-soluble polyester fiber comprises a step of spinning with polymerizing a water-soluble polyester component which is formed by polymerizing acid including terephthalic acid, isophthalic acid, dimethyl 5-sodiosulfoisophthalate, and diol including ethylene glycol, diethylene glycol and polyethylene glycol. The stretching ratio is 1.1 to 2.8. Bis-beta-hydroxyethyl terephthalate is additionally included in the polymerization.
