PURPOSE: A manufacturing method of a tofu coagulant is provided to remove viscosity and sparkling of cavernous body of Opuntia ficus-indica var saboten, and then ferment the Opuntia ficus-indica var saboten. CONSTITUTION: A manufacturing method of a tofu coagulant comprises the following steps: washing opuntias and removing remained spines or foreign substances; colloid liquidizing the washed opuntias by mixing and pulverizing the opuntias with purified water; fermenting the colloid liquid; and filtering the fermented liquid. The mixing ratio of the purified water is 5-12 times more than the weight of the opuntias. The particle size of the colloid liquid is 0.1-5 mm or less. In the fermenting step, at least one yeast between Saccharomyces cerevisiae and Saccharomyces coreanus is used, and the fermenting lasts for 5-9 days at 28-36deg.C.
