摘要 PURPOSE: A cooking method for duck meat by smoking is provided to remove an unique bad smell of the duck meat by combusting liquid enzymes obtained from fermenting plants, grape seed oil, and cognac. CONSTITUTION: A cooking method for duck meat comprises the following: smoking the duck meat(S100); firstly roast the smoked duck meat using a ceramic roaster in a yellow soil furnace form(S200); spread liquid enzymes on the surface of the roasted duck meat(S300); and insert the duck meat with grape seed oil and cognac into a pan, and combust the grape seed oil and cognac to evaporate the liquid enzymes and remove the bad smell from the duck meat(S400).
