PURPOSE: A controlling method of the storage temperature of a kimchi storage apparatus is provided to enable users to eat the property aged kimchi for a long time. CONSTITUTION: A controlling method of the storage temperature of a kimchi storage apparatus comprises the following steps: setting the kimchi storage temperature at the strong storage temperature when the aging process of kimchi is finished(S1, S2); controlling the load to the kimchi storage apparatus based o the strong storage temperature; setting the kimchi storage temperature at the standard storage temperature(S4); and controlling the load to the kimchi storage apparatus based o the standard storage temperature. The strong storage temperature is lower than the standard storage temperature, and slows down the aging process of the kimchi.
