FIELD: food industry. ^ SUBSTANCE: invention is intended for usage in fish industry during preparation of moulded semi-products from secondary raw material. One prepares skin-off fish fillet from defrosted or cooled fish raw material and ready salted-and-smoked products having mechanical damages or softening because of spawning changes. The produced fillet is cooled till the temperature in the products bulk is conditioned to 5C and milled to produce mince. One introduces additives in the form of vegetable, grit, laminaria and taste-and-flavour components. The produced fish mixture is moulded into semi-products. ^ EFFECT: invention ensures reduction of the quantity of solid wastes generated during manufacture of moulded semi-products with improved organoleptic properties and enhanced nutritive value; production of additional products alongside with the basic ones, allows to extend the products range, increase the yield of food fish products manufactured from a supplied raw material unit. ^ 2 ex |
