PURPOSE: A composition containing novel lactic acid bacteria for decomposing soybean saponin is provided to produce beta-glucosidase and to ensure acid tolerance and bile acid resistance. CONSTITUTION: A composition for decomposing soybean saponin contains Lactobacillus johnsonii MH8 KU41 or Lactobacillus salivarius E4191 or a crushed material thereof as an active ingredient. The crushed material is prepared by sonication and centrifugation of a suspension of the strain. A soybean milk product contains the strain or the crushed material and extract.
