The purpose of the present invention is to provide a novel process for producing a terpene-8-glycoside. The present invention provides: a process for producing a terpene-8-glycoside using a terpene-8-glycosyltransferase; a transformant having a terpene-8-glycosyltransferase gene introduced therein and a method for producing the transformant; and a plant in which the expression of a protein having an activity of glycosylating position-8 of a monoterpene compound is inhibited.
