<P>PROBLEM TO BE SOLVED: To provide such a texture of a food as soft when the food is put in the mouth but tough and chewy when the food is crunched in the mouth. <P>SOLUTION: The snack food is a baked snack food having a cross-sectional structure with first dough (2) layered on second dough (4). The first dough (2) contains tapioca processed starch, oil and fat, and water. The second dough (4) contains tapioca processed starch, oil and fat, water, and an inflating agent. The second dough (4) contains tapioca processed starch whose content is larger than the first dough (2). The content ratio of oil and fat contained in the first dough (2) is larger than the content ratio of oil and fat contained in the second dough (4).
