<P>PROBLEM TO BE SOLVED: To provide cation-modified xanthan gum excellent in temporal stability and storage stability. <P>SOLUTION: The purified cation-modified xanthan gum has the following characteristics (1) and (2): (1) the nitrogen content of the cation-modified xanthan gum is 0.3-4.0 wt.%; (2) the amount of a cationizing agent remaining in the cation-modified xanthan gum is 1.0 wt.% or less.
