The device has an analysis apparatus for characterizing a gaseous or vaporous component, which is appeared during a foaming phase, in proximity to a foam surface. Correlation between characterized features of the component and operating parameters of a production plant is determined. A control unit provides actuating variables for observing predetermined quality characteristics of generated foam. The gaseous or vaporous component is supplied to a mass spectrometer or to a measuring cell with an infrared absorption spectrometer by a tubular connection. An independent claim is also included for a method for real-time process control of production plant for manufacturing foam substances and composite products.
