PURPOSE: A beta-carotene hydroxylase gene derived form Ipomoea betatas (L.) Lam is provided to selectively enhance beta-carotene content and to develop a plant with antioxidation. CONSTITUTION: A beta-carotene hydroxylase protein derived from Ipomoea betatas (L.) Lam has an amino acid of sequence number 2. A gene encoding the beta-carotene hydroxylase protein contains a base sequence of sequence number 1. A recombinant vector contains the gene encoding the beta-carotene hydroxylase protein. A host cell is transformed by the recombinant vector.
