<p>PURPOSE: A method for preparing a complex of omega-3 unsaturated fatty acid and ascorbic acid is provided to remarkably enhance yield and productivity. CONSTITUTION: A complex of omega-3 unsaturated fatty acid and ascorbic acid is prepared by condensing omega-3 unsaturated fatty acid and ascorbic acid under the presence of lipase. The condensation is performed under the presence of ionic solvent or mixture solvent of ionic solvent and organic solvent. The ionic solvent is trioctylmethylammonium·trifluoroacetate, 1-butyl-3-methylimidazolium·CF_3SO_3, or mixture thereof. The organic solvent is methanol, ethanol, t-butanol, 2-methyl-2-butanol, or acetone.</p> |
