PURPOSE: A producing method of dongchimi(watery radish kimchi) using yacon is provided to offer nutrients of lactobacillus bifidus by adding the yacon, walleyed pollack, and seaweed to the dongchimi. CONSTITUTION: A producing method of dongchimi using yacon comprises the following: 20~25wt% of white radish; 20~25wt% of yacon; 2~5wt% of onion; 2~5wt% of pear; 2~4wt% of spring onion root; 0.1~0.5wt% of garlic; 0.1~0.5wt% of ginger; 40~50wt% of stock of walleyed pollack, sea tangle, green laver, and anchovy; 0.4~0.6wt% of carrot; 0.2~0.4wt% of chestnut; 0.3~0.6wt% of oenanthe javanica; 0.1~0.4wt% of jujube; and 0.5~0.8wt% of salt or salicornia herbacea. |
