PURPOSE: A method for making knife-cut noodles using Phellinus linteus germinated in brown rice is provided to improve viscosity, tension force, tastes etc of the noodles while maintaining beneficial effects of Phellinus linteus and germinated brown rice. CONSTITUTION: A method for making knife-cut noodles using Phellinus linteus germinated in brown rice comprises the following steps: manufacturing a mixture by mixing the Phellinus linteus germinated in brown rice, refined salt, sodium hydrogen carbonate, wheat flour, and starch etc; kneading the mixture with water; steaming the kneaded mixture at a temperature between 10°C ~ 40°C. A knife-cut noodles manufacturing method includes a step for adding Phellinus linteus powder in the brown rice.
