A process comprises treating a material which consists of or contains the cells of a microorganism to cause rupture by mechanical means of the cell walls and thereafter, with or without an added proteolytic enzyme, subjecting the sotreated material to enzymic hydrolysis. The process is applicable to yeasts, moulds, and bacteria. Many specific examples are given. The mechanical disruption may be brought about by means of blowing with air or an inert gas and an abrasive material, by subjecting to a sudden pressure drop during passage through a narrow orifice, by freezing and grinding, or by ball grinding. The enzyme used in the final stage may be papain, ficin, bromelin or trypsin.</p> |
