Cereal flour composition for instant noodles and manufacturing method of instant noodles using the same are provided to improve disentangling property and good reconstituting property. The instant noodle is obtained by making the flour gelatinized and puffed. The pulverized material of wheat flour granulated by heating has the particle diameter is 500~700mum and alpha pictorial view of 80% or more. In case of a particle diameter is 500~700mum, apparent specific gravity is 55~75g/100ml. The particle diameter of the bread pulverized material is the range of 200~1600mum. The flour composition for the instant noodle contains the gelatinized and puffed flour 1~10 mass %. |
