Coffee-flavored beverages using soybeans and a preparation method thereof are provided not to use coffee as a raw material in order to prevent side-effects caused by caffeine while showing the taste and flavor of the coffee. A method for preparing coffee-flavored beverages using soybeans comprises the following steps of: heating soybeans at 200-240°C with 1-3 kg/cm^2 for 5-20 minutes in order to remove fats(S10); roasting the fat-removed soybeans using a roaster at 180-240°C for 1-3 hours(S20); crushing the roasted soybeans and mixing the 100 parts of crushed beans with 1000-3000 parts of water; heating the mixture at 60-90°C for 1-3 hours so as to extract a coffee-flavor material(S30); and freeze-drying the coffee-flavored extracts under the condition of 10-40 degrees below zero and 20-100mmHg(S40). The soybeans represent white bean, green bean, black been and yellow bean. |
