An animal carcass heat/dry treatment apparatus is provided to dry and treat animal carcasses with direct heat of a combustion heat circulation room by forming a steam circulation room in which steam is circulated and discharged. An animal carcass heat/dry treatment apparatus comprises: a combustion heat circulation room(100) in which the heat of a burner is circulated in the outer circumference of a heat/dry treatment chamber(10); and a steam circulation room(200) in which steam generated in the heat/dry treatment chamber is circulated and discharged. The direct heat of the combustion heat circulation room is delivered to an animal carcass(1) accepted in the heat/dry treatment chamber. The steam including bad smell generated in the animal carcass moves in the steam circulation room and is heated with conduct heat of the combustion heat circulation room in which the heat of the burner is circulated so that bad smell and moisture are minimized.
