#CMT# #/CMT# The block (2) has mold blocks (3) that are placed between the block (2), and disk shape circular bases (8) provided with a peripheral crown (11) that is in the form of a cylinder. The crown has a ventilation side opening (13) for circulation of the air in horizontal sensible direction, where the opening is in contact with an upper part of cheese (16) placed at the inner of a unit cheese mold (4). The opening is discharged on the lower edge of the crown of the base (8). #CMT#USE : #/CMT# Base block for manufacturing of cheese during the draining of the cheese. Can also be used during the reversing and handling the cheese. #CMT#ADVANTAGE : #/CMT# The mold blocks are placed between the base block, thus permitting the air circulation, such that the faces of the cheese are in contact with the exterior air. The cheeses fabricated by using the block are placed in same air condition then the cheese manufactured by exiting method, thus controlling the temperature condition of the cheese, during draining without disturbing the draining, if the opening is surrounded or protected by the platform. The block permits to change the temperature of the cheese rapidly and uniformly, while modifying the temperature of the draining room.
