<P>PROBLEM TO BE SOLVED: To provide an edible composition useful as a moisture barrier or a moisture resistant structure. <P>SOLUTION: The edible composition or food comprises (a) a dairy ingredient having a low mineral content, (b) a cocoa component having a low mineral content, (c) an emulsifier selected from the group consisting of acetic acid esters of mono and diglycerides of fatty acids, lactic acid esters of mono and diglycerides of fatty acids, citric acid esters of mono and diglycerides of fatty acids, and polyglycerol polyricinoleate, (d) a fatty component, and (e) at least one sugar and/or polyol having a water activity of at least 0.84 in the form of a saturated solution and compounded at respective specific ratios. <P>COPYRIGHT: (C)2009,JPO&INPIT |
