METHOD FOR DRYING FOOD PRODUCTS IN FUNCTIONAL CONTAINERS OF A HEAT AND MASS EXCHANGE MODULE

A method for drying food products in functional containers of a heat- and-mass exchange module includes preliminary preparation of a raw material, shredding, filling the functional containers with the food raw material and drying thereof in the heat-and-mass exchange module with a specified spacing up to the final moisture content of 3-7% at a temperature of a drying agent of 20-120 °С. Drying of the food products is carried out in the functional containers in which the total area of openings for discharging the moisture from the material is to be 2-20% from the total area of a wall of the channels of the drying agent which are arranged in the heat-and-mass exchange module.
