Chocolate containing hermetically sealed mould is connected to a vacuum pump. - A centrally positioned double ball valve arrangement on top of the metal or plastics mould did enables a vacuum to be established inside the mould. - After transferring the mould to a cooling tunnel for a pre-determined time, the bottom ball valve is depressed, allowing air to enter the mould after which the lid is removed and the chocolate lifted out.
