<P>PROBLEM TO BE SOLVED: To provide a poly-γ-glutamic acid having a super-high molecular weight produced by a halotolerant strain, Bacillus subtills var. chungk, and food products, cosmetics, animal feeds and mineral absorption-promoting composition each including the glutamic acid. <P>SOLUTION: This is a super-high molecular weight poly-γ-glutamic acid (PGA) having a molecular weight of more than 5,000 kDa which is produced by a halotolerant strain, in which more than 95% of the molecules have a molecular weight in the range of 3,000 to 15,000 kDa, and can be produced through the culture of Bacillus subtills var. chungk.
