A method for expressing the texture of leather by sugar paste is provided to express the surface texture of cakes realistically by expressing the texture of natural leather on the surface of sugar paste by various food colors. A method for expressing the texture of leather by sugar paste comprises the steps of: mixing sugar powder of 65~75 gram wt.%, gelatin of 1~3 gram wt.%, CMC(Carboxy Methyl Cellulose) of 1~3 gram wt.%, the white of an egg of 1~3 gram wt.%, lemon juice of 1~2 gram wt.%, white vegetable fat of 1~3 gram wt.%, water of 8~12 gram wt.%, glucose of 6~11 gram wt.%, and food colors of 0.1~0.2 gram wt.% in a double boiler(10); kneading dough for 20 minutes(20); cutting the dough in the proper size, putting the cut dough in a zipper bag and then putting the zipper bag into an airtight container, and ripening the dough in a refrigerator or at normal temperature for 24 hours(30); rolling the ripened dough in the thickness of 2~8mm by a push stick(40); and expressing the rough or fine surface texture of leather by repeating a process for horizontally rolling up the front end of the dough toward the inside and unrolling the dough with hands, and vertically rolling up the front end of the dough to the inside with hands and unrolling the dough, about 50~60 times(60). |
