<P>PROBLEM TO BE SOLVED: To provide a raw material of bean curd processed food, which is storable for a long time at a normal temperature and hard to be collapsed a method for producing the raw material, and bean curd processed food. <P>SOLUTION: A method of production/storage of an intermediate raw material of bean curd processed food includes soaking bean curd as a raw material in alcohol aqueous solution or alcohol aqueous solution containing either or both of salt or/and disaccharide, and maintaining the raw material without any change. The raw material of bean curd processed food storable for a long time at normal temperature is obtained by the method. The method for producing the raw material of bean curd processed food includes drying the intermediate raw material to eliminate alcohol content from the material. The raw material of bean curd processed food hard to be collapsed and maintaining the palate feeling and flavor of bean curd is obtained by the method. The food raw material is obtained by the method. The bean curd processed food includes the food raw material.
