<P>PROBLEM TO BE SOLVED: To provide protein supplemental food maintaining excellent palatability and amino-acid balance in spite of containing hydrolyzed protein (peptide) having unfavorable flavor typified by bitterness and/or smell. <P>SOLUTION: The protein supplemental food which is in liquid form and has excellent palatability while containing ≥20 wt.% of protein consisting mainly of peptide, is obtained by adding erythritol and thaumatin to collagen peptide, peptide other than the collagen peptide, and amino acid to have pH 6.5 or more. <P>COPYRIGHT: (C)2008,JPO&INPIT |
