Preparing an oil (A) from plants, or their parts, comprising drying; grinding to powder and solvent-less extraction in a press or extruder under vacuum, with or without (a) introduction of an inert gas and/or (b) temperature regulation, is new. Independent claims are also included for: (1) use of olein (A1), a clear, bright phase obtained by winterization of (A), to prepare food, dietic, cosmetic, dermatological, pharmaceutical or therapeutic compositions or supplements, for human or veterinary use, and in preparation of insecticidal or plant-protecting compositions; (2) use of stearin (A2), a phase containing all or part of the crystalline components obtained by winterization of (A), for similar purposes; (3) use of a composition (B) isolated by fractionation of (A) for similar purposes; and (4) compositions or supplements, as specified in (1), that contain (A), (A1), (A2) or (B).
