Functional citron preserved with sugar and a preparation method thereof are provided to enhance the quality of citron syrup by using silk worm powder and elm powder. Functional citron preserved with sugar is prepared by the steps of: (a) washing and cutting citrons, and removing the seeds; (b) pulverizing silkworms; (c) washing, drying and pulverizing the bark of elm; (d) mixing 60~80wt% of the citron, 1~10wt% of the silkworm powder, 1~10wt% of the elm powder, and 10~30wt% of at least one sugar ingredient selected from the group consisting of sugar, fructose, oligosaccharide, honey, wheat-gluten, and grain syrup; (e) aging the mixture at 5~15°C for 10~20days; (f) grinding the aged mixture and packing it by 100g~5kg; and (g) aging the packed products at 0±5°C for 10~60days. |
