<P>PROBLEM TO BE SOLVED: To provide a method for processing ajoene-containing oil and fat, for stably retaining ajoene having strong bioactivation. <P>SOLUTION: This method for processing the ajoene-containing oil and fat comprises adding niacin to ajoene-containing oil and fat, or adding niacin to ajoene-containing oil and fat followed by mixing, and removing insoluble niacin with filtration treatment so as to stably retain ajoene in oil and fat. <P>COPYRIGHT: (C)2008,JPO&INPIT |
