SUPERCOOLING PROMOTING AGENT

In the process of investigating a mechanism by which a tree growing in a cold climate maintains cellular water in a liquid state at a low temperature, the inventor conducted an investigation to identify a causative substance of that. As a result, the inventor identified a supercooling promoting substance present in the tree. The supercooling ability of an identified flavonoid glycoside and a synthesized flavonoid glycoside having a similar structure was tested and it was found that a supercooling promoting agent consisting of such a flavonoid glycoside can stably supercool bulk water at a low temperature for a long period of time. An aqueous solution containing the supercooling promoting agent of the present invention is useful as a solution for storing a biological material at a low temperature.
