The treatment of walnut, hazel nut and almond nut to obtain foodstuff, comprises dehulling comprising a thermal treatment of pellicle of almond nuts followed by a mechanical and texturizing treatment. The thermal treatment is an infra-red/micro wave/gamma radiation treatment to carry out a pre-heating of the pellicle and water enamored between the pellicle and almond to concentrate absorption of microwaves. The microwaves having a frequency of thousand mega hertz, is used to stimulate heating of water residing to interface pellicle/almond and delaminating the pellicle.
