A DRY MIX, SUCH AS FRUCTOSE-CONTAINING BEVERAGE MIX, IS PREPARED BY COATING THE FRUCTOSE PARTICLES WITH FINE PARTICLES OF A FOOD ACID. THE COATED FRUCTOSE PARTICLES ARE RESISTANT TO BROWNING WHICH CAN DEVELOP IN THE PRESENCE OF HEAT AND MOISTURE, ESPECIALLY IF ANY ALKALINE INGREDIENTS ARE CONTAINED IN THE MIX. |
