Provided is a method for manufacturing bittern for bean curds from deep seawater, wherein the prepared bittern contains no sulfate ion, has a mineral balance between Ca and Mg, and improves a taste of bean curds. The method for manufacturing bittern for bean curds from deep seawater comprises the steps of: collecting deep seawater found at the depth of at most 200m underground to produce bittern for bean curds; removing sulfate ions from the produced bittern by electrodialysis; and controlling a mineral balance between Ca and Mg to prepare bittern for bean curds, wherein a weight ratio of Ca/Mg is adjusted to 0.8-6.0 by using a calcium agent for controlling mineral balance. |
