PURPOSE: A sterilized liquid sauce and germ-free processing equipment is for manufacturing the liquid sauce, such as curry, stew or hashed beef whose viscosity is prevented from decreasing and color from changing, which are the problems of the existing method, the continuous sterilizing and packing under an aseptic condition. CONSTITUTION: A above problems can be solved by keeping the back pressure in the sterilizing pipe device to control the pressure difference between an entrance and an exit of the sterilizing step below 10kg/cm¬2 to preserve back pressure in the sterilizing pipe device and sterilize the liquid cooking sauce with heat. The manufacturing processes of the sterilized liquid sauce consists of: mixing the ingredients for sauce and making liquid cooking sauce, transferring the sauce into the sterilizing pipe device; sterilizing with heat in the sterilizing pipe device; regulating the back pressure in the sterilizing pipe device to control the pressure difference between an entrance and an exit of the sterilizing step below 10kg/cm¬2; packing in a container. The germ-free processing equipment consists of the device mixing the ingredients for sauce and making liquid cooking sauce, the device transferring the sauce into the sterilizing pipe device; the device sterilizing with heat in the sterilizing pipe device; the device regulating the back pressure in the sterilizing pipe device; the device packing the sterilized sauce in a container. |
