The device has a stem support zone disposed obliquely on a lower part with respect to a longitudinal axis (3) of the device and to a pivoting axis (10) so that fingers of the hand holding the device are not obstructed by the stem during cutting. A knife (7) is disposed obliquely on an upper part (B) along an angle comprised between the axis (3) and an axis of the zone to obtain a desired and constant elongated bevel stem cutting angle.
