PROBLEM TO BE SOLVED: To provide a method for calculating the microorganism count with which the microorganism count in an edible material can be calculated in a small number of steps. SOLUTION: A second growth rate v2 which is the growth rate of microorganisms in a first edible material A at a third temperature T3 is measured. A third growth rate v3 which is the growth rate of the microorganisms in the first edible material A at a fourth temperature T4 is then measured. A straight line passing through two points of a point (T3,√v2) and a point (T4,√v3) is subsequently prepared. Thereby, a relational expression a is obtained. A first temperature T1 that is a temperature in which the growth rate (square root thereof) is zero in the relational expression a is then determined. The first growth rate v1 which is the growth rate of the microorganisms in a second edible material B at a second temperature T2 is subsequently measured.
