摘要 <p>A novel esterase which is derived from Ideonella sp 0-0013 strain (FERM BP-08660) and has the following properties: (1) function and substrate specificity: it hydrolyzes methyl 3-hydroxypalmitate, to produce 3-hydroxypalmitic acid and methanol, (2) optimum temperature for functioning: 37°C, (3) optimum pH and a pH range for stability: pH 7 to 10, (4) temperature stability: 97 % stability at 43°C, (5) inhibition, activation and stabilization: it is activated by a sodium ion or a potassium ion and inhibited by a strontium ion, an iron ion (II) or methyl palmitate, (6) molecular weight: ca. 46500Da (according to SDS-PAGE) and ca. 41000Da (according to the gel filtration method), and (7) isoelectric point: pI 4 (according to the polyacrylamide gel isoelectric focusing method); and a food material which is enhanced in the content of an free amino acid such as glutamine, varine, isoleucine, leucine, or arginine in a total grain powder of a seed of a wheat or in a pulverized product of a seed of a wheet during maturation from immediately after the sprout of an ear to the formation of a maturated grain, and a method for producing the material.</p>
