PURPOSE: A method of making a fermented meat and fish product by extracting or fermenting meat and fish with a substance purported to be of a health benefit such as cereals, fruits or the like is provided. The fermented product is rich in nutrients and effective in improving protective immunity against diseases, promoting metabolism and reducing hangover while having a good taste. CONSTITUTION: The fermented meat and fish product are prepared by extracting or fermenting meat and fish with a substance effective as a medicine for 1 to 3 months or more at 5 to 38deg.C. The substance effective as a medicine contains cereals, fruits or the like. The nutraceuticals contain mushroom polysaccharide, catechin, Pycnogenol, propolis or the like. The cereals contain rice, glutinous rice, barley, wheat, millet, oat, cowpea, buckwheat, sorghum, mung beans or the like are mixed with dietary fiber, vegetables or the like. The fruits contain plums, ginger, ginseng, red ginseng, grapes, pears, apples, persimmons, apricots, wild grapes, water melons, bananas or the like.
