PURPOSE: Provided are an automatic baking apparatus and a baking method which offer the method for properly baking bread even when using the rice flour as a main ingredient, and bake the bread as quickly as possible. CONSTITUTION: The automatic baking apparatus(99), which is automatically operated from the kneading of the bread ingredient to the bread forming, includes: a case(1), covering the outer wall of the automatic baking apparatus(99); a vessel(7,8), arranged inside the case and containing the ingredients of bread; a mixer, mixing the ingredients contained in the vessel; a mixing controller, controlling the operation of the mixer; a temperature controller, controlling the temperature of the vessel; and a central controller, controlling the mixing controller and the temperature controller according to the sequence of baking the bread made of rice flour. |
