摘要 <P>PROBLEM TO BE SOLVED: To provide a multi-layered jelly-like food in which many jelly-like food layers having colors, flavors, textures, and the like, respectively, are laminated and which can easily be prepared, can hold freshness and the like, and has a remarkably improved taste, and whose layers are clearly separated and not deformed, even when thermally sterilized. <P>SOLUTION: This multi-layered jelly-like food whose layers are not deformed, even when thermally sterilized, is characterized by satisfying all of the following conditions (1) to (5). (1) The food comprises native type gellan gum-using layers and native type gellan gum-disusing layers. (2) The native type gellan gum-using layers and the native type gellan gum-disusing layers are adjacently laminated. (3) The amount of the native type gellan gum is added in an amount of 0.05 to 1.2 wt. % based on a mix liquid for the native type gellan gum-using layer. (4) A brix difference between the adjacent layers is &ge;5%. (5) The jelly mix liquids for the layers are charged at temperatures of &ge;50&deg;C.
