PROBLEM TO BE SOLVED: To modify and alter drinking water, agricultural water, water for breeding fishes and shellfishes, brewing water and another water to enhance the preservability thereof and to obtain a good taste water, agricultural water having marked effect in growth of agricultural crops, breeding water having spoilage resistance to enhance viability, breweing water enhancing an enzymatic fuction to enhance brewing efficiency and water for ready-mixed concrete capable of producing concrete suitable for health. SOLUTION: The electron storage material for supplying electrons to water for modifying water comprises woody charcoal, fly ash or a solidified material of them. The woody charcoal has a heat history temperature of 850-1020°C, an electric resistivity of 0.3-below 10Ωcm, and its volume ratio to that of the fly ash is 1/3 to 1/8.
