<p>An astaxanthin medium-chain fatty acid ester whose application can be expected in the fields of food, cosmetic and drug and which is superior in digestion absorptivity and tissue transition capability to the astaxanthin of long-chain fatty acid ester type. Although in the prior art any esterification has not occurred even when it is intended to synthesize a medium-chain fatty acid ester of astaxanthin by the catalytic action of lipase, a composition containing an astaxanthin medium-chain fatty acid monoester and/or diester is successfully produced by reacting astaxanthin or a long-chain fatty acid ester thereof with a medium-chain fatty acid or a triglyceride or appropriate ester thereof in a reaction system wherein a given amount of water is incorporated. According to necessity, the monoester and/or diester is isolated. Further, there is provided a food or cosmetic containing the above composition.</p> |
