PURPOSE: A method of aging and storing meat by cooling meat to a temperature of 0deg.C or less, sterilizing and aging for a specified time and thereafter storing at a temperature of -5deg.C or less is provided. The method enables continuous storage of meat in a semi-frozen state without a frozen state and thus provides good quality meat. CONSTITUTION: Meat stored in a storehouse is cooled to a temperature of 0deg.C or less, sterilized and aged for a specified time. Then, the aged meat is stored at a temperature of -5deg.C or less. A temperature deviation in cooling temperature and long-term storage temperature for the sterilization and aging treatment is within ± 2deg.C. For sterilization treatment, electric impact is applied or a germicidal lamp using inorganic matter such as ceramic or jade is used.
