Coffee etc. is packed in sealed galvanised containers in which the pressure is artificially raised above atmospheric by injected gas, e.g. CO2, N2 or its oxides. The gas can be solid or liquid. This pressure is pref. 0.2 kg/cm2 higher than atmospheric, and the pressure is produced in the container after de-aerating the product and the container by evacuation. These several evacuation processes are pref. interposed by gas flushing runs. |
