PURPOSE: Provided is an apparatus for steaming and cooling powder by spraying steam or moisture in a reverse direction to powder such as wheat flour and steaming it two times through a steamer without scattering of powder and then supplying a koji manufacturing chamber therewith after cooling. It gives a steaming rate of 93% or more through a first steamer then a second steamer, suppresses generation of dust and improves a cooling efficiency of powder material. CONSTITUTION: Powder for use in manufacturing soy sauce from a supply hopper through a hoist is supplied to a first steamer then a second steamer containing a five-step steam pipe(22). When the powder such as wheat flour is passed through a connecting hole(23, 24) and agitated while transferring through a transfer impeller(26) and a triangle rod(27) of a rotational axis(25), moisture or steam is supplied through a steam pipe(28) with a spray nozzle(29) in a reverse direction to powder material in the first steamer and the second steamer to provide steamed cereal grain having a moisture content of 34 to 36%. |
