PROBLEM TO BE SOLVED: To obtain a preservative for a food, having antimicrobial properties, not changing a food taste, being safe to the human body. SOLUTION: (a) Water is mixed with chitosan, powdered skim milk, starch, citric acid, ethanol andα-amylase to form a first complex polysaccharide being a copolymer of an amino sugar, mannuronic acid and guluronic acid, (b) the complex polysaccharide is mixed with pullulanase and epimerase is formed to form a second complex polysaccharide in which mannuronic acid is partially converted into guluronic acid by the action of epimerase, (c) the second complex polysaccharide is mixed with cyclodextrin and alginate lyase is formed and the second complex polysaccharide is decomposed by the action of alginate lyase to form an oligosaccharide. The formed oligosaccharide comprises an uronic acid such as mannuronic acid, guluronic acid, etc., a chitosan-derived component, etc., has antimicrobial properties and safety to the human body. The oligosaccharide does not change a food taste even if added to a food.
