PROBLEM TO BE SOLVED: To prevent the temperature of an object to be treated from being higher than sterilizing temperature and also to shorten a come-up time in a heating and sterilizing apparatus for overshoot heating. SOLUTION: The heating and sterilizing device is provided with a atmospheric temperature detector 2 for detecting the atmospheric temperature in a treatment tank 7, a heat supply controller for controlling heat supply to the treatment tank, an object temperature detector 11 for detecting temperature of the object 6 to be treated in the treatment tank and an operation controller 1 for controlling the operation of the heat supply controller. The operation controller 1 heats the object 6 in a heating process with atmospheric temperature as overshoot temperature, and calculates a treatment object temperature change gradient in the heating process thereby controlling the heat supply controller 8 so that the atmospheric temperature is lowered in the minus gradient of the treatment object temperature change gradient when the temperature of the object 6 becomes changeover temperature which is lower than sterilizing temperature. |
